Simple Chocolate Chai-Chia Seed Pudding

Instructions
- Pour just-boiled water into a heat-safe container and steep the chai tea bags in it for 3-5 minutes (or as long as is recommended on the package).
- Remove the bags, squeezing out the excess liquid.
- Mix the steeped tea, coconut milk, maple syrup, cocoa powder, and vanilla in a pot and whisk to combine.
- Add the chia seeds and whisk again
- Cover and place in the refrigerator overnight to chill.
- Remove and whisk once more to redistribute the seeds.
- Top with fruit of your choice. I chose fresh, local peaches, but strawberries would also be a great match.
- *Optional- Instead of mixing in bowl, try using a blender (vitamix is our favorite) to combine ingredients. This will help whip it into a thicker, more decadent pudding.
