Quinoa Tabbouleh

Ingredients

1 cup Cooked Quinoa
1/4 cup Chopped Basil
1/2 cup Diced Red Pepper
1/2 cup Diced Dried Apricots
1/3 cup Fresh Lemon Juice
1/3 cup Olive Oil
1/4 cup Unsalted Sunflower Seeds
Parsley to taste
Cilantro to taste

Instructions

Mix everything in a big bowl, and store in the fridge for up to a week- enjoy!
