Winter is setting in and the holidays are fast-approaching. We’re attending soirees, family dinners, and doing our best to stave-off winter sniffles. Many of us wish to supplement our nutrition from naturally-derived sources, but we may also be suckers for sweets, and that’s okay.
We can eat our medicine and like it too with our Nourishing Rosehip Herbal-Jello.
Here’s a modern take on an old-school classic. Organic rosehip and fresh fruit pack that nutritious punch, and apple juice and fresh-brewed Earth’s Aromatique Autumn-Cranberry Tea adds just enough sweetness and holiday flavours. No added sugar, dye, or Spam required.
Nourishing Rosehip Herbal-Jello

Ingredients
- 1 cup Organic Apple Juice we love the one from Santa Cruz
- 1 tbsp Organic Apple Juice divided
- 1/4 cup Rosehips dried, we use rosehips from Earth's Aromatique
- 3/4 cup Filtered Water divided
- 2 tbsp Earth's Aromatique Autumn Cranberry Tea Blend
- 1.5 tbsp Organic Gelatin Powder we use the powder from GoBio
- 1 tbsp Collagen Powder we use collagen from Organika or BulletProof
- 1 cup Strawberries fresh; or, gelatin-appropriate fruit of choice **

Nourishing Rosehip Herbal-Jello

Instructions
- Measure out ½ cup apple juice and dried rosehip into a small pot. Warm over medium heat until the rosehips are hydrated, approximately 7 to 10 minutes.
- Meanwhile, boil ½ cup filtered water, remove from heat, and add the Earth's Aromatique Autumn Cranberry tea blend. Cover and steep 5 to 7 minutes.
- Measure and pour remaining ¼ cup filtered water into a large mixing bowl and add gelatin powder. Using a wire whisk, mix thoroughly.
- Add the hot Autumn Cranberry tea and continue to whisk until thoroughly blended and no lumps remain.
- Add warm apple juice and rosehip mixture, mix well.
- Add collagen and continue to whisk. Then add remaining ⅔ cup apple juice and mix again.
- Place the fruit into an 8 by 8 inch baking dish, a medium decorative glass bowl, or several small ramekins. Pour gelatin mix over the fruit. Cover and chill in fridge until set, 6-8 hours, preferably overnight.
- May be enjoyed chilled or room temperature. Will last 4-5 days refrigerated.

** Fruits containing protease enzymes, such as pineapple, mango, or kiwi, may prevent gelatin from setting properly and are not good choices for this recipe. Berries, oranges, apples, peaches, and plums all work well; use what’s fresh and mix it up to your own personal tastes!
